Spinach Pie (A Rhode Island Thing) with Spinach Salad




Tonight's dinner is a baked Spinach Pie from Uncle Tony's Restaurant here in Rumford. Hubby picked them up when we had a pizza one night and I froze them. They are huge! So, I am making a spinach salad with mandarin oranges. It is sooo good and I will bake one of the spinach pies and split it between hubby & I. So, poor Mike, he has another dinner with green stuff. But I know he likes spinach pies. They are made with an italian bread dough and filled with a spinach that was cooked in some olive oil. Add to that some black olives and voila, you have a spinach pie!






Recipe for spinach salad: (makes 4 servings)
2 cups of spinach
1 small can of mandarin oranges
1 small red onion, thinly sliced into rings
1/4 c. thinly sliced onions, toasted

Dressing:
1 tbsp. orange juice
1 tbsp. honey mustard
1 tsp. honey

Toss first 4 ingredients. Mix dressing in a bowl. Drizzle over salad.




Dessert is a dish with 1/4 c. black raspberries, one container of Yoplait pineapple upside down cake (fat free), a little cool whip lite and topped with a small amount of Post grapenuts cereal. Yummy!

Calories for dinner: 223, carbs: 37, fat: 6 protein: 6

CALORIES FOR THE DAY: 1,251, carbs: 197, fat: 25, protein: 72
