Lunch is leftovers


So, you know I cleaned out my refrigerator this past weekend. Hubby never ate the dinner I prepared on my long run day last Thursday. So, I packed up my tuna steak, my grilled asparagus and my roasted sweet potatoes and I have a fabulous high protein lunch for today. I also had some grilled broccoli in my fridge, so I took that as well.

Since I am working on the road today, this is a great lunch for me. I have everything in my tupperware containers, so I can reheat in the microwave at the office. I also packed a Larabar for dessert, the coconut cookie one.

399, carbs: 46, fat: 11, protein: 32

Bocca burger, asparagus, grilled peaches for dinner


Tonight's dinner was very healthy. My hubby told me there was too much food. I think it was just perfect.

I grilled a bocca burger for me. I grilled a real hamburger for my "I am still a carnivore" husband. I also grilled asparagus (favorite veggie) and some Trader Joe's baked beans. These beans were so good and cheap! I love Trader Joes! I also had the idea to grill the peaches that I got at TJ's. They were really ripe and ready to go. I brushed them with a little EVOO and when I flipped them, I added some goat cheese. The creamy goat cheese with the sweetness of the grilled peaches was delicious! It was so good, hubby wanted to know why I put dessert on the dinner plate.

I finished the dinner off with a wine that hubby found in a wine magazine. It is called Casa and it is a Chilean wine from a company called Lapostolle. It is a Cabernet from 2006. Excellent, if you like a dry wine with a lot of legs. It is my new favorite.

Calories (if you ate the Bocca burger and were not a "carnivore": 576, carbs: 60, fat: 16 & protein 31

Dessert was a Trader Joes raspberry vanilla ice cream bar (80 calories)

Count for the day: (okay, okay, I had two wines---I told you it is my favorite)

All goals met. Let's see if I can run tomorrow.

Ahi Tuna steaks, asparagus, sweet potato


Still hungry. So I feasted on a 4 oz. tuna steak (shared one oz. with my dogs/cats -- they begged). Really simple recipe. Got the tuna steaks frozen from Trader Joe's. Love that store. I grilled the sweet potatoes yesterday in the oven with a little EVOO. So, for the recipe for the above, I just brushed olive oil on the asparagus and lightly dusted the steaks and the veggies with lemon pepper seasoning (no oil on the tuna). It was so yummy. I figured I would eat a heavier meal at noontime and a much lighter dinner after the BIG RUN. Dinner will probably be left overs for 2 reasons, I have a ton of them in the fridge and I will be exhausted. I made a second plate of the tuna above for the hubby. The iced tea is TJ's mint iced tea with a little Stevia added for sweetness. I had 15 TJ's low fat ginger cat cookies for people. I think in a few hours I will be all digested and ready to go.

Calories for lunch: 386, carbs 44, fat 10, protein 31
Calories for cookies: 240, carbs 50, fat 4, protein 4 (I had 30 cookies)

Asparagas Quesadillas for Dinner



Okay, I need more veggies for dinner. So here goes the asparagas Quesadilla. It has some strange ingredients, but is very very tasty.

1 tbsp. olive oil
1 lg. red onion, diced
2 cloves of garlic, minced
1/2 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. cinnamon
1/8 tsp. crushed red pepper
1 lb. asparagus spears, cut into two inch pieces, lightly steamed in microwave
12 grape tomatoes, halved

6 flour tortillas (I used spinach ones)
1/2 cup light cheddar cheese (you could also use Monteray Jack)
1 cup store bought salsa
1 small dolup of sour cream (if you want, we had corn on the cob instead from Trader Joes-Yummy)

To make the asparagus filling: In a large nonstick skillet, heat the oil over medium heat. Add the onion and cook, stirring occasionally, for 3 to 4 minutes, or until softened. Add the garlic, chili powder, cumin, cinnamon, and pepper. Stir for 1 minute.

Add the asparagus and tomatoes. Cook, stirring occasionally, for 3 minutes, or until the flavors are blended. Transfer the mixture to a large bowl.

To assemble the quesadillas: Divide the asparagus filling among the tortillas, positioning it on one half of each. Sprinkle with the cheese. Fold the tortillas in half.

Clean the skillet and coat it with cooking spray. Heat over medium-high heat. Add 2 tortillas and cook for 2 minutes per side, or until golden. Press with a spatula to flatten slightly. Repeat with the remaining tortillas.
5.
To serve, cut each quesadilla in half and top with the salsa, tomatoes, sour cream and garnish with cilantro.

244 calories each quesadilla

Also, had two special K protein waters with dinner 60 calories



So here goes the totals for today:

1597 calories, 198 carbs, 58 grams of fat, 95 grams of protein (yeah)
Whoops went over my calorie allotment for the day, but worked out like a maniac so, I should be okay. PS Went for another 1 hour dog stroll tonight. Add that to the calorie burn.
